For over 40 years, the grappas of Michele Chiarlo have been synonymous with elegance and a cleansing taste. In 2015, the grappas of the Palás range were created: Modern, silky and charming.
We use small bain marie copper stills with a discontinuous cycle: equipment which ensures delicate grappas with strong characteristics of the original grape.
It is important to distill fresh pomace which has not been pressed, meaning not particularly rich in must: we focus our attention on distilling a few days after the end of fermentation.
Our most classic grappa, from pomace selected from the home of Chiarlo, is refined in barrels of different woods.
Silky and intense, with the perfumes of vanilla and mature fruit, in the mouth it is rich and inviting, perfect with chocolate
