Under
the historical Torre dei Contini, situated on Canelli's highest
hill (380 metres a.s.l.), there is a Moscato vineyard that was planted
in 1951, south facing, with a 35° slope and soil composed of calcareous
marl and sand and poor in organic substances. In particularly benevolent
years, after the grape has reached its peak of ripeness, we delay
harvesting for twenty-odd days. The bunch of grapes withers slightly
and becomes golden in colour.
In
this way there comes about a natural concentration of the sugars
therein along with an evolution of the aromatic substances that
characterise the delicious perfumes of the Moscato grape of Canelli.
There derives a must of extraordinary richness, which is fermented
in spring and then remains for some months on its own yeasts prior
to bottling.
The
richness of its perfumes and structure, with a delicious fragrance
and an extraordinary elegance, makes this a unique dessert wine.
Characteristics:
intense, complex and fascinating bouquet with clear notes of tropical
fruit and honey. Ample, persuasive and highly concentrated flavour.
