The grappas
and the spirits

 

Grappa is exclusively an Italian product produced by distillation of the lees of the wine (fermented skins). Its origins are found in the 16 th century, and Piedmont is one of Italy 's region with the longest tradition of production. Over time, we have modified our production process from simple stills heated over a direct flame to those using steam and a bain-marie (double boiler) process, like the Caffey still.

Our grappas are distilled in small copper stills using a bain-marie or irregular steaming process. These methods are slow and costly but result in gentle grappas which retain the characteristic of the varietals from which they are produced.

A fine grappa is critically dependent on the distillation of fresh lees. Our attention to this criterion and the design of our distillation facility allow us to complete the process within a few days after the completion of fermentation. Super grapes and the extraordinary skill and meticulous care of our master distiller yield very delicate grappas of fine varietals typicity.

BAROLO CHINATO

We decided to re-present this old fashion recipe, invented in 1800 by a pharmacist of Serralunga d'Alba, who wanted to produce a tonic based on Barolo wine, adding to it Calissaja bark, other spices, and a little amount of sugar.

We took this recipe and adding a bit of alpine herbs (25 different kinds of herbs) we created a unique elisir, which combines the complexity and finesse of Barolo with the exotic flavours of bark.

Colour : amber red.
Aroma : Delicate, intense and complex, spicy with bitter hints.
Taste: full, delicate, lovely bitter.
Accompaniments: perfect with chocolate desserts, excellent as a digestive drink.
