In
1989, starting off from a clone of extraordinary worth from an old
pre-phylloxera vineyard on the "Fornaci" hill in the commune of
Tassarolo, a vineyard of Cortese grapes was planted.
The
Fornaci vineyard is situated in a microzone which, thanks to its
clayey marl soil rich in microelements and to the special local
climate influenced by the sea breezes from the nearby Ligurian coast
and by the fresh winds sweeping down from the Apennines, is highly
suited to the growing of an extremely elegant Gavi.
Fermentation
comes about in large oak casks, where the wine remains on its yeasts,
with weekly stirrings, for at least 8 months. It is a white wine
of the utmost elegance and complexity, endowed with extraordinary
longevity.
Carattere
del Cru: Characteristics of the cru: intense bouquet,
complex and delicate, with hints of honey, anise, ripe citron. On
the palate it is full, persuasive, rounded and backed by a pleasingly
acidulous freshness.
Life
cycle: it reaches its peak after 3-4 years and maintains its
features up to 8-10 years
